Pesto pasta

This pasta dish is an excellent side dish and goes well with a meat or fish. It’s also really really easy, provided you have a food processor. I only have a little processor, so once I combined the nuts, cheese, garlic, pepper and salt, I added a little basil. Once the basil was ground in, I took a little of the mix out and placed it into a separate bowl. I continued adding basil and taking a little of the mix out until it was all ground up.

I got this recipe off of epicurious.com several years ago, but now I can’t find it for the life of me. Basically it has 3 cups basil, 2/3 cup Parmesan, 2/3 cup olive oil, 3 large garlic cloves, 1/2 cup pine nuts, 1 teaspoon salt, and 1/2 teaspoon pepper. You put the garlic in a food processor and grind it into a paste. Then you add everything but the olive oil and mix that up in the processor. Finally you add the oil. When the pesto is done, you put it in a bowl and start cooking the pasta.

When the pasta is finished, you reserve 1/3 cup pasta water and mix it in to the pesto. Then and the pasta and you’re done!

This pesto is super fresh, tasty and smells amazing!
